Bhaat
Soft, fluffy steamed white rice, the heart of every Bengali meal. Perfectly cooked to accompany dal and curries, this simple recipe is a daily staple ready in just 20 minutes.
For 4 servings
Wash the rice thoroughly.
Place the rice in a bowl and wash it under cold running water, gently rubbing the grains. Repeat 3-4 times until the water runs clear. Drain completely.
TIPWashing removes excess starch, which is key to getting fluffy, non-sticky rice.Bring rice and water to a boil.
- Combine the washed rice, 2 cups of water, and a pinch of salt in a medium saucepan with a heavy bottom.
- Bring the mixture to a rolling boil over medium-high heat.
Cover and simmer until water is absorbed.
Once boiling, immediately reduce the heat to the lowest setting. Cover the pan with a tight-fitting lid and let it simmer for 10-12 minutes, or until all the water has been absorbed.
TIPDo not lift the lid while the rice is simmering. This traps the steam inside, which is essential for cooking the grains perfectly.Rest the rice off the heat.
Turn off the heat and let the rice stand, covered and undisturbed, for at least 5 minutes. This step allows the moisture to redistribute, ensuring every grain is perfectly cooked and firm.
Fluff with a fork and serve hot.
Gently fluff the steamed rice with a fork to separate the grains. Serve immediately with your favorite dal, curry, or bhaja.
What to keep in mind.
4 tips from the recipe — small details that make a real difference to the final dish.
- 1Using the right rice-to-water ratio (1:2) is key for fluffy rice. Adjust slightly based on the age and type of your rice.
- 2A heavy-bottomed pan ensures even heat distribution and prevents the rice from sticking and burning at the bottom.
- 3For extra aroma, you can add a bay leaf or a green cardamom pod to the water while cooking.
- 4Store leftover rice in an airtight container in the refrigerator for up to 2 days. Sprinkle with a little water before reheating.
