Wash the chayote and cucumber thoroughly. Peel the chayote completely, then cut it in half lengthwise and carefully remove the soft core and seed.
Using a sharp vegetable peeler, create long, thin ribbons from the chayote halves. Apply firm, even pressure and rotate the chayote as you peel to get consistent strips. Repeat the process with the unpeeled English cucumber.
In a small bowl, whisk together the fresh lemon juice, extra virgin olive oil, fine sea salt, and freshly ground black pepper until well combined. Taste and adjust seasoning if necessary.
Gently place the chayote and cucumber ribbons into a large mixing bowl. Pour the prepared dressing over the ribbons.
