Crunchy Water Chestnut & Cucumber Salad

Thoroughly wash the water chestnuts and cucumber. Peel the water chestnuts and dice them into 1/4-inch pieces. Dice the cucumber into similar 1/4-inch pieces. Finely chop the fresh cilantro and optional mint.
In a small bowl, whisk together the fresh lime juice, olive oil, salt, and optional red pepper flakes and honey/agave nectar until well combined. Taste and adjust seasoning as needed.
