DIY Spicy Roasted Chickpeas

Drain the soaked chickpeas and add them to a pressure cooker with 3 cups of fresh water. Cook on medium heat for 3-4 whistles until tender but not mushy. They should hold their shape when pressed.

Drain the cooked chickpeas in a colander and rinse with cold water to stop the cooking. Spread them on a clean kitchen towel and pat them completely dry. Discard any loose skins that come off.
