Heat your water to approximately 175°F (80°C). Water that is too hot can burn the matcha, making it bitter. Pour the hot water over the sifted matcha powder.
Using a bamboo whisk (chasen) or a small kitchen whisk, vigorously whisk the matcha and water in a 'W' or 'M' motion until a smooth, bright green paste forms and a fine layer of foam appears on the surface. Ensure there are no visible lumps.
