METHOD · 3 STEPS
Prepare the tender coconut.
- Carefully open the top of the tender coconut using a heavy knife or cleaver.
- Pour all the coconut water into a blender jar.
- Using a spoon, gently scoop out the soft, tender flesh (malai) from inside.
- Measure and add about 20g of the flesh to the blender, reserving the rest for another use.

- Add the fresh lemon juice to the blender with the coconut water and flesh.
- Blend on high for 30 to 60 seconds until the flesh is broken into fine pieces and the drink is well combined.
TIPFor a chunkier texture, you can finely chop the coconut flesh and stir it into the water instead of blending.Season and serve chilled.
- Pour the blended coconut water into a serving glass.
- Sprinkle the pinch of black salt over the top and stir well.
- Add a couple of ice cubes if desired.
