Prepare the litchis: Gently peel the thin skin from each litchi. Carefully make a small incision along one side of the litchi and remove the dark pit. Discard the pits and set the prepared litchi flesh aside.
Prepare the raspberries: Gently rinse the fresh raspberries under cool, running water. Carefully pat them dry with a paper towel to remove excess moisture.
Assemble the first skewer: Take one small bamboo skewer. Thread one prepared litchi onto the skewer, pushing it about an inch from the end. Follow with three fresh raspberries, then finish with another litchi.
Repeat assembly: Continue this process, assembling the remaining three skewers in the same Litchi-Raspberry-Raspberry-Raspberry-Litchi pattern until all 4 skewers are complete.
Arrange for freezing: Line a small baking sheet or tray with parchment paper or a silicone mat. Carefully arrange the assembled skewers in a single layer on the prepared tray, ensuring they do not touch each other.
