Gently score around the equator of each mangosteen with a small paring knife, being careful not to cut deeply into the delicate white flesh. Twist and pull apart the two halves to reveal the white, segmented pulp. Carefully remove all the white segments, discarding the tough purple rind and any large seeds.
Place all the extracted mangosteen segments into a high-speed blender. Blend on high until the mixture is completely smooth and creamy. If the purée is exceptionally thick and struggling to blend, you may add 1-2 tablespoons of cold water, but aim for the thickest possible consistency.
Carefully pour the smooth mangosteen purée into a standard ice cube tray or silicone molds. Fill each cavity almost to the top. Gently tap the tray on the counter a few times to release any trapped air bubbles and ensure an even fill.
Transfer the filled tray to the freezer. Freeze for a minimum of 4 hours, or until the mangosteen bites are completely solid and firm to the touch.
Once frozen, pop the mangosteen bites out of the tray. Transfer them to an airtight freezer-safe bag or container. Store in the freezer for up to 3 months. Enjoy 1-3 bites as a refreshing, naturally sweet, and cooling treat whenever a craving strikes.
