Wash the radicchio head thoroughly. Trim off only the very bottom of the core, leaving enough intact to hold the leaves together. Cut the radicchio lengthwise into 4-6 wedges, depending on its size.
In a medium bowl, gently toss the radicchio wedges with the olive oil, kosher salt, and freshly ground black pepper until they are evenly coated.
Place the seasoned radicchio wedges directly on the preheated grill grates. Grill for 3-4 minutes per side, turning once, until the leaves are slightly charred, tender-crisp, and the core is softened.
