High-Protein Makhana Trail Mix

Preheat your oven to 300°F (150°C). Spread the almonds, pumpkin seeds, walnuts, and cashews in a single layer on a baking sheet. Roast for 8-10 minutes, stirring halfway through, until lightly toasted and fragrant. Remove from oven and let cool completely.
In a large, heavy-bottomed pan or kadai, heat the ghee or coconut oil over medium heat. Add the raw makhana and roast, stirring continuously, for 5-7 minutes until they are crunchy and crisp. They should snap easily when broken. Remove from pan and set aside in a large mixing bowl.
In the same pan (if using), add the fresh curry leaves and let them crisp up for about 30 seconds. Remove and add to the bowl with the makhana.
Add the sea salt, black pepper, chaat masala, turmeric powder, and red chili powder (if using) to the makhana and curry leaves in the large mixing bowl. Toss everything thoroughly to ensure the makhana is evenly coated with the spices.
Add the cooled roasted nuts and seeds to the seasoned makhana mixture. Toss gently again to combine all ingredients evenly.
Spread the trail mix on a large plate or baking sheet and allow it to cool completely to room temperature. This step is crucial for maintaining its crispness.
