If using fresh jackfruit, carefully peel, remove the large seeds and any fibrous core, then chop the flesh into small, bite-sized pieces. If using canned jackfruit, ensure it is packed in water or light syrup, drain thoroughly, and pat dry before chopping.
If your almonds are not pre-toasted, spread them in a single layer on a dry skillet over medium heat. Toast for 2-4 minutes, stirring frequently, until lightly golden and fragrant. Let cool completely.
In a tall glass, jar, or bowl, spoon half (about 1/2 cup) of the plain Greek yogurt to form the first layer.
Evenly distribute half (about 1/4 cup) of the chopped jackfruit over the yogurt layer. If desired, drizzle with half of the honey or maple syrup.
Sprinkle half of the toasted sliced almonds and half of the chia seeds (if using) over the jackfruit layer.
