Makhana Trail Mix

Preheat oven to 150°C (300°F). Spread almonds, cashews, pumpkin seeds, and sunflower seeds on a baking sheet. Roast for 8-10 minutes, or until lightly golden and fragrant. Let cool completely.
In a large, dry pan over medium heat, add the makhana. Dry roast for 5-7 minutes, stirring frequently, until they are crisp and snap easily when broken. Remove from pan and set aside.
In the same pan, heat olive oil over medium-low heat. Add curry leaves and let them splutter and crisp up (about 30 seconds).
Immediately add the roasted makhana, roasted nuts, and seeds to the pan. Sprinkle with chaat masala, black salt, black pepper, and turmeric powder.
Toss well to ensure all ingredients are evenly coated with the spices. Continue to cook for another 1-2 minutes, stirring constantly, to allow the spices to toast slightly.
Remove the mixture from heat and spread it out on a large plate or baking sheet to cool completely. This step is crucial for maintaining crispness.
Once completely cool, gently fold in the dried cranberries (if using). Transfer the cooled trail mix to an airtight container and store at room temperature for up to 2 weeks.
