Moong Dal Vegetable Khichdi

Prepare the dal, rice, and vegetables
- Rinse the moong dal and brown rice together under running water until the water runs clear.
- Soak the dal and rice mixture in water for 30 minutes. Drain before using.
- While they soak, wash and chop the cauliflower into small florets and dice the carrot.

Heat ghee in a pressure cooker over medium heat. Once hot, add the cumin seeds and let them splutter. Add the asafoetida (hing) and grated ginger, and sauté for about 30 seconds until fragrant.
Sauté the vegetables
Add the diced carrots, cauliflower florets, and green peas to the cooker. Sauté for 2 minutes. Add the turmeric powder and mix well.
Cook the khichdi
- Add the drained dal and rice mixture to the cooker.
- Pour in 3 cups of water and add the salt. Stir everything together.
- Secure the lid of the pressure cooker and cook on medium-high heat for 3-4 whistles (about 12-15 minutes).
Rest and finish
Turn off the heat and allow the pressure to release naturally. This can take about 10-15 minutes. Once the pressure has dropped, open the lid.
