Soak, grind, and ferment the batter
- Rinse rice and urad dal in separate bowls and soak each in water for 4 hours.
- Drain and grind urad with fenugreek to a fluffy smooth paste using ice-cold water.
- Grind soaked rice separately to a slightly grainy paste; combine both with salt to form a pourable batter.
- Cover and ferment in a warm spot 8 hours or overnight until risen and pleasantly sour.
