Thoroughly wash the rambutan, lime, and fresh mint leaves under cold running water.
Peel the rambutans, carefully remove the central seed, and gently crush the flesh with the back of a spoon or fork to help release their natural juices and flavor. Place the crushed rambutan into a large pitcher (approximately 2-liter capacity).
Thinly slice the lime into rounds. Add the lime slices to the pitcher with the rambutan.
Gently bruise the fresh mint leaves by clapping them between your hands or lightly pressing them with a muddler. This action releases their aromatic oils without making them bitter. Add the bruised mint leaves to the pitcher.
Pour 8 cups (approximately 2 liters) of cold filtered water over the fruit and mint in the pitcher. Stir gently to combine all the ingredients.
Cover the pitcher and refrigerate for a minimum of 1 hour to allow the flavors to infuse. For a more pronounced flavor, infuse for 2-4 hours, or even overnight.
Serve the infused water chilled, optionally over ice. You can strain out the fruit and mint before serving, or leave them in for visual appeal.
The infused water can be stored in the refrigerator for up to 2 days. For best flavor, consume within 24 hours. The pitcher can be refilled with water once or twice, though the flavor will become milder with each refill.
