Refreshing Ber & Mint Cooler
This Refreshing Ber & Mint Cooler is a vibrant, hydrating smoothie featuring the subtle sweetness of jujube fruit, invigorating mint, and a hint of ginger, perfect for a warm day or to soothe an upset stomach.
For 2 servings
Thoroughly wash the fresh jujube fruits. Carefully pit them and chop them into smaller pieces, discarding any bruised parts.
Peel the small piece of fresh ginger. You can roughly chop it to help with blending.
In a high-speed blender, combine the chopped jujube fruit, unsweetened coconut water, fresh mint leaves, peeled ginger, and fresh lime juice (if using).
Add the ice cubes and optional honey or maple syrup to the blender.
Blend on high speed until the mixture is completely smooth and creamy, with no visible chunks of fruit or ginger. This usually takes 30-60 seconds.
Taste the cooler and adjust sweetness or tartness if desired by adding more honey/maple syrup or lime juice.
Pour the Refreshing Ber & Mint Cooler into two glasses and serve immediately. Garnish with a fresh mint sprig if desired.
