Soy Milk with Cardamom
A warm, comforting beverage made with soy milk gently simmered with aromatic cardamom and a hint of cinnamon. A perfect dairy-free alternative to traditional spiced milk, ready in minutes.
For 4 servings
Combine milk and whole spices.
In a small saucepan, pour the soy milk. Add the lightly crushed cardamom pods and the cinnamon stick.
TIPCrushing the cardamom pods helps release more of their aromatic oils into the milk.Gently simmer the milk.
Place the saucepan over medium-low heat. Warm the milk until it comes to a gentle simmer, but do not let it come to a rolling boil. Let it simmer for 5-7 minutes to allow the spices to infuse.
TIPKeep the heat low to prevent the soy milk from scorching or boiling over.Add sweetener.
Remove the saucepan from the heat. Stir in the sugar until it is completely dissolved.
Strain and serve.
Strain the spiced milk through a fine-mesh sieve into serving cups to remove the whole spices. Garnish with a tiny pinch of cardamom powder and serve immediately.
TIPFor a cold version, allow the milk to cool completely before refrigerating for at least an hour.
