Carefully cut the ripe purple passion fruit in half. Using a spoon, scoop all the pulp and seeds into a tall serving glass.
Add the fresh mint leaves to the glass. If desired, add the optional agave nectar. Gently muddle the mint leaves and passion fruit pulp together with a muddler or the back of a spoon for about 10-15 seconds to release their flavors.
Squeeze the juice from the quarter lime directly into the glass, ensuring no seeds fall in.
Fill the glass generously with ice cubes, almost to the top.
Pour the sparkling water over the ice and fruit mixture until the glass is full.
