For 1 serving
Gently wash the starfruit and mint leaves. Thinly slice about 1/4 of a starfruit into star shapes, reserving one slice for garnish.
Place the 6 fresh mint leaves and fresh lime juice into a tall serving glass. Using a muddler or the back of a spoon, gently press and twist the mint leaves 2-3 times to release their aromatic oils without tearing them apart.
Add the prepared starfruit slices (3-4 pieces) into the glass with the muddled mint and lime.
Fill the glass generously with ice cubes, ensuring there's enough room for the sparkling water.
