Thoroughly wash the carambola. Trim off the dark edges of the ridges, then slice it thinly crosswise into star shapes, about 1/4 inch thick.
Gently bruise the mint leaves by clapping them between your palms or lightly crushing them with a spoon. This releases their aromatic oils.
Place the sliced star fruit and bruised mint leaves into a clean pitcher or large glass jar.
Pour 1 liter of cold filtered water over the fruit and mint.
Stir gently to combine. Cover the pitcher and refrigerate for at least 1 hour, or preferably 2-4 hours, to allow the flavors to fully infuse. For a stronger flavor, you can infuse overnight.
