Wash the sweet lime thoroughly. Peel half of the sweet lime, removing any white pith, and roughly chop the flesh into small pieces.
Place the chopped sweet lime pieces and fresh mint leaves into a sturdy drinking glass (preferably a highball or tumbler).
Using a muddler or the back of a wooden spoon, gently press and twist the sweet lime and mint leaves for about 15-20 seconds. The goal is to release the juices from the lime and the aromatic oils from the mint without pulverizing them.
Add the ice cubes to the glass, filling it about three-quarters full.
Pour the sparkling water over the muddled ingredients and ice. If using, add the agave nectar or your preferred sweetener at this stage.
