Turnip Green & White Bean Soup

Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened and translucent, about 5-7 minutes.
Add minced garlic and red pepper flakes (if using) to the pot. Cook for another 1-2 minutes until fragrant, being careful not to burn the garlic.
Pour in the vegetable broth and canned diced tomatoes (undrained). Add the bay leaf. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pot.
Add the chopped turnip greens to the pot. They will seem like a lot, but they will wilt down significantly. Stir well to combine, cover, and continue to simmer for 10-15 minutes, or until the greens are tender.
Stir in the rinsed and drained cannellini beans. Season the soup with salt and black pepper to taste. Continue to simmer for another 5-10 minutes to allow the flavors to meld and the beans to heat through.
Remove the bay leaf. Stir in the fresh lemon juice.
Ladle the soup into bowls. Garnish with fresh chopped parsley and, if desired, an extra drizzle of olive oil. Serve hot.
