Veg Khichdi
A wholesome and comforting one-pot meal made with brown rice, moong dal, and mixed vegetables. Gently spiced and cooked in ghee, this soft and mushy khichdi is perfect for toddlers, easy on the tummy, and incredibly nutritious.

Prepare the dal and rice
Rinse the moong dal and brown rice together under running water until the water runs clear. Soak them in water for 30 minutes, then drain completely.

- Heat ghee in a pressure cooker over medium heat.
- Add the cumin seeds and let them splutter.
- Add a pinch of asafoetida (hing) and sauté for a few seconds.

- Add the grated ginger and sauté for 30 seconds until fragrant.
- Add the chopped carrots, peas, and tomatoes.
- Sauté for 1-2 minutes until the vegetables soften slightly.
Combine all ingredients
- Add the drained dal and rice mixture to the cooker.
- Stir in the turmeric powder and a pinch of salt.
- Pour in 3 cups of water and mix everything well.
Pressure cook the khichdi
Secure the lid of the pressure cooker. Cook on medium heat for 4-5 whistles. Turn off the heat and let the pressure release naturally.

Open the cooker and give the khichdi a good stir. If it seems too thick, you can add a little warm water to adjust the consistency. Serve warm in a bowl.
