Process the nuts: Add the raw walnuts or almonds to a food processor. Pulse in short bursts until the nuts are finely ground but not yet turning into butter (about 30-60 seconds). You want a texture similar to coarse sand with some smaller pieces remaining.
Add the dates: Add the pitted dates to the food processor with the ground nuts. If using, add a tiny pinch of sea salt here.
Blend until combined: Process continuously until the mixture comes together into a sticky, cohesive ball or a thick, crumbly dough that sticks together firmly when pressed between your fingers. This may take 1-2 minutes, and you might need to stop and scrape down the sides of the bowl once or twice.
Press into a pan: Line an 8x8 inch (20x20 cm) square baking dish or a loaf pan with parchment paper, leaving an overhang on the sides for easy removal. Transfer the date-nut mixture to the prepared pan and press it down very firmly and evenly using the back of a spoon, a flat bottomed glass, or your hands (lightly dampen your hands to prevent sticking).
