Coconut & Berry Ice Pops
These refreshing Coconut & Berry Ice Pops are a guilt-free treat, offering natural sweetness and hydration with absolutely no added sugar. Perfect for cooling down on a hot day, they're incredibly easy to make with just a few simple ingredients.
For 6 servings
If using fresh berries, gently wash them under cold water and pat dry. If using frozen, no thawing is necessary.
Carefully place an even amount of mixed berries into the bottom of each popsicle mold. If using mint leaves, tear them slightly to release their aroma and tuck 1-2 leaves into each mold alongside the berries.
Slowly pour the unsweetened coconut water into each popsicle mold, filling it almost to the top, leaving about 1/4 inch of space to allow for expansion during freezing.
Insert the popsicle sticks or mold covers firmly into each mold. Ensure the sticks are centered and straight.
Place the filled popsicle molds on a flat surface in your freezer. Freeze for a minimum of 4-6 hours, or until completely solid.
To remove the ice pops, run the molds briefly under warm water (about 10-15 seconds) to loosen them. Gently pull the stick to release the pop.
Serve immediately and enjoy your naturally sweet and refreshing treat!
