Preheat a dry skillet over medium heat. Add the walnuts and toast for 3-5 minutes, stirring frequently, until fragrant and lightly browned. Remove from heat and let cool completely, then roughly chop.
Wash and trim the celery stalks. Using a sharp knife or mandoline, thinly slice the celery into crescent-shaped pieces. Place in a large mixing bowl.
