Dark Chocolate Bark with Pecans & Goji Berries
This simple yet elegant dark chocolate bark combines the rich, slightly bitter notes of high-quality dark chocolate with the earthy crunch of pecans and the chewy sweetness of goji berries, all finished with a hint of flaky sea salt.
For 8 servings
Line a small baking sheet (approximately 8x8 inches or similar) with parchment paper, ensuring it extends slightly over the edges for easy lifting.
Gently melt the chopped dark chocolate. You can do this using a double boiler (a heatproof bowl set over a saucepan of simmering water, ensuring the bowl doesn't touch the water) or in the microwave in 30-second intervals, stirring well after each, until smooth and fully melted. Be careful not to overheat the chocolate, as it can seize.
Pour the melted chocolate onto the prepared parchment paper. Using an offset spatula or the back of a spoon, spread the chocolate into an even layer, about 1/4 inch thick, forming a rough rectangle or square.
Immediately and evenly sprinkle the chopped pecans, dried goji berries, and the pinch of flaky sea salt over the melted chocolate before it begins to set.
Carefully transfer the baking sheet to the refrigerator and chill for at least 30 minutes, or until the chocolate is completely firm and snaps cleanly when broken.
Once firm, remove the chocolate bark from the refrigerator. Lift the parchment paper from the baking sheet and break the bark into irregular pieces of your desired size.
Store the dark chocolate bark in an airtight container in the refrigerator for up to 2 weeks, or at cool room temperature (below 70°F / 21°C) for up to 1 week.
What to keep in mind.
4 tips from the recipe — small details that make a real difference to the final dish.
- 1Chocolate Quality Matters: Using high-quality dark chocolate (70% cacao or higher) will significantly impact the flavor and texture of your bark. It melts smoother and has a richer taste.
- 2Avoid Water: When melting chocolate, ensure no water comes into contact with it, as even a tiny drop can cause the chocolate to seize and become clumpy.
- 3Even Thickness: Spreading the chocolate to an even thickness ensures that all pieces set at the same rate and have a consistent, satisfying snap.
- 4Creative Toppings: Don't be afraid to experiment! Other great additions include dried cranberries, toasted almonds, orange zest, or a sprinkle of chili flakes for a spicy kick.
