These no-bake Date-Sweetened Cacao Energy Bites are a wholesome, fiber-rich snack, naturally sweetened with dates and packed with healthy fats and protein from nuts and cacao.

If your dates feel dry or hard, place them in a bowl and cover with warm water for 10 minutes. Drain thoroughly before proceeding.
In a food processor, add the almonds or walnuts. Pulse until they are finely chopped but not yet a butter. This creates a good base texture for the bites.
Add the pitted dates, unsweetened cocoa powder, fine sea salt, and vanilla extract to the food processor with the chopped nuts.
Process on high speed, scraping down the sides of the bowl as needed, until the mixture comes together into a sticky, uniform dough. It should be pliable and hold its shape when pressed between your fingers.
If the mixture appears too dry and crumbly and doesn't stick together, add water, 1 tablespoon at a time, and process again until the desired consistency is reached. Be careful not to add too much water.
Scoop out about 1 tablespoon of the mixture and roll it firmly between your palms to form a compact, smooth ball. Repeat with the remaining mixture to form approximately 15 bites.
If desired, roll the formed energy bites in unsweetened shredded coconut, extra cocoa powder, or finely chopped nuts for an additional coating and texture.
Place the energy bites on a plate or in an airtight container and refrigerate for at least 30 minutes to allow them to firm up, which makes them less sticky and more enjoyable.
