Frozen Grape & Yogurt Bark

Line a 9x13 inch (23x33 cm) baking sheet with parchment paper, allowing some overhang on the sides for easy removal later.
In a medium bowl, combine the plain Greek yogurt with honey and vanilla extract, if using. Stir until well combined and smooth.
Pour the yogurt mixture onto the prepared baking sheet. Using an offset spatula or the back of a spoon, spread it evenly into a thin layer, about ¼ to ½ inch (0.6 to 1.2 cm) thick.
Arrange the halved red grapes evenly over the yogurt layer, pressing them gently into the yogurt. Sprinkle the chopped pistachios over the grapes.
Transfer the baking sheet to the freezer. Freeze for at least 3-4 hours, or until the yogurt is completely firm and solid.
Once frozen, lift the parchment paper with the bark from the baking sheet. Carefully break the bark into irregular pieces of desired size.
