Thoroughly wash the grapefruit. Using a sharp knife, thinly slice the grapefruit into rounds, discarding the very ends. You can cut the rounds in half if your pitcher opening is narrow.
Gently wash the fresh mint sprigs. To release their aromatic oils, lightly bruise the mint leaves by clapping them between your palms a few times or gently twisting the sprigs.
Place the grapefruit slices and bruised mint sprigs into a large pitcher or infuser bottle.
Pour 8 cups (2 liters) of cold filtered water over the fruit and herbs, ensuring they are mostly submerged.
Stir gently to combine. Cover the pitcher and refrigerate for at least 1 hour, or ideally 2-4 hours, to allow the flavors to fully infuse. Avoid infusing for more than 8 hours to prevent potential bitterness from the grapefruit pith.
Serve the infused water chilled, with or without ice, in your favorite glass.
