Ensure your honeydew melon is cut into chunks and frozen solid for at least 4 hours, or preferably overnight. Juice half a fresh lime.
Combine the frozen honeydew chunks, 3/4 cup (180ml) of cold water or coconut water, the fresh lime juice, and the fresh mint leaves in a high-speed blender.
Blend on high speed until the mixture is completely smooth and creamy. You may need to stop and scrape down the sides of the blender a few times to ensure everything is incorporated.
Check the consistency. If the cooler is too thick for your preference, add an additional 1/4 cup (60ml) of water or coconut water and blend again until the desired pourable consistency is reached.
Taste the cooler. If desired, add a tiny pinch of salt to enhance the flavors and balance the sweetness, or a small amount of natural sweetener like honey or agave syrup if you prefer it sweeter. Blend briefly to combine.
