Oat Flax Energy Balls
Quick, no-bake energy balls packed with oats, flaxseed, and peanut butter. Dotted with dark chocolate chips, they're the perfect healthy snack for a midday boost or to support lactation.
For 5 servings
Combine all ingredients.
In a medium bowl, mix together the rolled oats, peanut butter, honey, ground flaxseed, dark chocolate chips, and a pinch of salt until well combined. The mixture should be sticky and hold together when pressed.
Chill the mixture.
Cover the bowl and chill in the refrigerator for at least 15 minutes. This helps the oats absorb moisture and makes the mixture easier to roll.
TIPIf the mixture seems too dry, add another teaspoon of peanut butter. If it's too wet, add another tablespoon of oats.Roll into balls.
Scoop out about one tablespoon of the chilled mixture at a time and roll it between your hands to form a small ball, about 1-inch in diameter. You should get about 10 balls.
Serve or store.
The energy balls are ready to eat immediately. Store any leftovers in an airtight container in the refrigerator for up to a week or in the freezer for up to 3 months.
