Prepare the pomegranate.
Wash the pomegranate under running water and pat it dry. Using a sharp knife, slice off the top crown and the bottom, just enough to expose the arils.
Score the pomegranate skin.
Lightly score the skin from top to bottom along the natural ridges of the fruit. Be careful not to cut too deep, just through the red peel.
Break open the fruit.
Gently pull the scored sections apart with your hands. The pomegranate should open up like a flower, exposing the clusters of arils.
De-seed the pomegranate.
- Fill a large bowl with cool water.
- Hold a pomegranate section over the bowl, arils facing down, and gently push the arils out with your thumbs.
- Alternatively, hold the section cut-side down and tap the back of the skin firmly with a wooden spoon. The arils will fall into the water.
- The white pith will float to the top while the heavier arils sink.

Skim off the floating white pith from the surface of the water. Pour the water and arils through a strainer to drain. Your fresh pomegranate arils are ready to be enjoyed as a snack.
