Prosciutto-Wrapped Figs

Gently wash the fresh figs under cool water and thoroughly pat them dry with a paper towel. Remove any hard stems.
Carefully cut each fig in half lengthwise, from the stem end to the bottom. For larger figs, you may cut them into quarters.
If using, take a small piece of goat cheese (about 1/2 tsp) and gently press it into the cut surface of each fig half.
Take one slice of prosciutto and carefully wrap it around each fig half (or quarter), ensuring it's snug but not overly tight. The prosciutto should cover most of the fig.
Arrange the prosciutto-wrapped figs artfully on a serving platter. You can stand them upright or lay them flat.
Just before serving, drizzle the balsamic glaze evenly over the figs, if desired. Finish with a light sprinkle of freshly ground black pepper.
