Roasted Grape & Goat Cheese Crostini

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wash and destem the red grapes. In a medium bowl, toss the grapes with 1 tablespoon of olive oil, fresh thyme, sea salt, and black pepper until evenly coated. Spread them in a single layer on the prepared baking sheet.
Roast the grapes for 15-20 minutes, or until they are softened, slightly shriveled, and beginning to burst. Remove from the oven and set aside.
While the grapes are roasting, arrange the baguette slices on a separate baking sheet. Brush both sides of each slice lightly with the remaining 1 tablespoon of olive oil.
Toast the baguette slices in the preheated oven (or a toaster oven) for 5-8 minutes, flipping halfway through, until golden brown and crisp. Watch carefully to prevent burning.
Once the baguette slices are toasted and slightly cooled, spread a generous amount of softened goat cheese onto each crostini.
