Savory Lion's Mane Scramble
Upgrade your morning eggs with this quick and easy Savory Lion's Mane Scramble, featuring sautéed lion's mane mushrooms for a meaty texture and rich, umami flavor. It's a high-protein, satisfying start to your day ready in under 15 minutes.
For 1 serving
Gently clean the lion's mane mushrooms with a damp cloth, then tear or chop them into bite-sized pieces. Set aside.
Heat 1/2 tablespoon of butter or olive oil in a non-stick skillet over medium-high heat. Add the prepared lion's mane mushrooms and sauté for 4-6 minutes, stirring occasionally, until they are golden brown and tender. Season with a pinch of salt and pepper. Remove mushrooms from the pan and set aside.
In a small bowl, whisk together the eggs, milk (or cream), garlic powder, remaining 1/4 tsp salt, and 1/8 tsp black pepper until well combined and slightly frothy.
Return the skillet to medium-low heat and add the remaining 1/2 tablespoon of butter or olive oil. Once the butter is melted and shimmering, pour in the egg mixture.
Allow the eggs to set for about 30 seconds without stirring. Then, using a spatula, gently push the cooked egg from the edges towards the center, tilting the pan to allow uncooked egg to flow underneath.
Continue to gently fold and push the eggs until they are mostly set but still slightly moist and creamy. Do not overcook.
Fold the sautéed lion's mane mushrooms into the scrambled eggs.
Transfer the scramble immediately to a plate. Garnish generously with fresh chopped chives and serve warm.
What to keep in mind.
4 tips from the recipe — small details that make a real difference to the final dish.
- 1For extra fluffy eggs, whisk them vigorously for at least 30 seconds to incorporate air. You can also add a tiny pinch of baking soda to the egg mixture.
- 2Avoid overcrowding the pan when sautéing the mushrooms; cook them in batches if necessary to ensure they brown nicely instead of steaming.
- 3Use a good quality non-stick pan for the best results when scrambling eggs, preventing sticking and ensuring easy cleanup.
- 4Don't overcook your scramble! Remove it from the heat when it's still slightly wet, as it will continue to cook from residual heat on the plate.
Adapt it for your goals.
