Wash and thoroughly dry the endive heads. Trim off the very bottom core, then thinly slice the endive crosswise into delicate ribbons. Place the sliced endive into a large mixing bowl.
Wash and core the apple. Using a mandoline or a very sharp knife, thinly slice or julienne the apple. If not serving immediately, toss the apple slices with a tiny splash of lemon juice (from the dressing allocation) to prevent browning. Add the apple to the bowl with the endive.
Finely chop the fresh parsley and add it to the bowl with the endive and apple.
In a small bowl, whisk together the freshly squeezed lemon juice, extra virgin olive oil, fine sea salt, and freshly ground black pepper until well combined and emulsified.
