Gather all ingredients and measure them accurately. If using fresh herbs, finely chop them.
In a small jar with a tight-fitting lid, combine the avocado oil, fresh lemon juice, Dijon mustard, sea salt, and freshly ground black pepper.
If desired, add the finely chopped fresh parsley or other herbs to the jar.
Secure the lid tightly on the jar. Shake vigorously for 30-60 seconds until all ingredients are well combined and the mixture appears creamy and slightly thickened, indicating it has emulsified.
