Cook the spinach, stirring occasionally, until it has completely wilted, about 1-2 minutes. If using frozen corn, add it now to thaw and heat through; if canned, add it in the next step.
Add the corn to the skillet with the wilted spinach and cook for another minute, stirring to combine and ensure the corn is heated through.
Pour the whisked egg mixture into the skillet over the spinach and corn. Let it sit undisturbed for about 30 seconds until the edges begin to set.
Using a spatula, gently push the cooked egg from the edges towards the center, tilting the pan to allow uncooked egg to flow underneath. Continue to gently fold and stir until the eggs are mostly set but still slightly moist.
