Tropical Yogurt Parfait
This Tropical Yogurt Parfait is a vibrant and refreshing dish, perfect for a quick breakfast or a satisfying snack. It combines creamy Greek yogurt with sweet, juicy pineapple and crunchy granola for a delightful texture and flavor experience.
For 1 serving
Prepare your ingredients: Ensure pineapple is peeled and cut into bite-sized chunks. Measure out the Greek yogurt and granola.
Take a clear glass or jar (about 12-16 oz capacity) for layering. Start by spooning half (approximately 1/2 cup) of the plain Greek yogurt into the bottom of the glass.
Evenly spread half (approximately 1/2 cup) of the fresh pineapple chunks over the yogurt layer.
Sprinkle half (approximately 2 tablespoons) of the low-sugar granola over the pineapple.
Repeat the layers: Add the remaining 1/2 cup of Greek yogurt, followed by the remaining 1/2 cup of pineapple chunks.
Top with the remaining 2 tablespoons of granola.
If desired, drizzle with honey or maple syrup, sprinkle with unsweetened shredded coconut, and/or add a pinch of fresh lime zest for an extra tropical zing.
Serve immediately to enjoy the crunch of the granola. If preparing ahead, keep granola separate and add just before serving to prevent it from getting soggy.
What to keep in mind.
4 tips from the recipe — small details that make a real difference to the final dish.
- 1For meal prep, layer the yogurt and fruit in a jar, but pack the granola separately in a small baggie. Add the granola right before eating to maintain its crispness.
- 2Adjust sweetness to your preference: If your pineapple isn't very sweet, a small drizzle of honey or maple syrup can enhance the flavor without overdoing it.
- 3Choose your yogurt wisely: Full-fat Greek yogurt offers a richer, creamier texture and can be more satiating, while low-fat options are lighter. Always opt for plain to control sugar content.
- 4Experiment with granola: Look for granolas with whole grains and minimal added sugars. You can also make your own for ultimate control over ingredients.
Adapt it for your goals.

Frequently asked questions
Yes, you can use frozen pineapple. Allow it to thaw slightly in the refrigerator before dicing or adding to the parfait. Be aware that thawed frozen fruit might release more liquid, which could make the yogurt a bit thinner.
