For 1 serving
If not already frozen, cut 2 cups of fresh watermelon into 1-inch cubes and spread them in a single layer on a baking sheet. Freeze for at least 4 hours, or until solid.
Combine the 1 ½ cups of frozen watermelon chunks, fresh lime juice, and 2 tablespoons of cold water in a high-speed blender. Add optional sweetener (agave nectar or honey) if desired.
Start blending on a low speed, gradually increasing to high, using the tamper if your blender has one, to push the ingredients towards the blades.
Continue blending until the mixture is completely smooth and has a thick, slushie-like consistency, scraping down the sides of the blender as needed.
If the mixture is too thick to blend, add cold water one tablespoon at a time until it reaches your desired consistency, being careful not to add too much.
Pour the slushie immediately into a chilled glass.
