Clementine & Avocado Salad
This vibrant Clementine & Avocado Salad is a refreshing blend of sweet citrus, creamy avocado, and peppery arugula, all tied together with a bright homemade vinaigrette.
For 2 servings
First, prepare the vinaigrette: In a small bowl, whisk together the extra virgin olive oil, white wine vinegar, Dijon mustard, optional honey/maple syrup, sea salt, and black pepper until well combined and emulsified. Set aside.
Prepare the clementines: Peel the clementines and carefully segment them. To do this, slice off the top and bottom, then cut away the peel and white pith. Working over a bowl to catch juices, carefully slice between the membranes to release the individual segments. Discard any seeds.
Prepare the avocado: Halve the avocado lengthwise, remove the pit, and scoop out the flesh. Slice the avocado into bite-sized pieces or thin wedges.
Prepare the walnuts: If desired, lightly toast the walnuts in a dry skillet over medium heat for 3-5 minutes until fragrant, then let them cool slightly before roughly chopping.
Assemble the salad: In a large serving bowl, gently combine the fresh arugula, clementine segments, and sliced avocado.
Dress and serve: Just before serving, drizzle the prepared vinaigrette over the salad. Sprinkle the chopped walnuts evenly over the top. Toss gently to combine all ingredients without mashing the avocado. Serve immediately.
What to keep in mind.
4 tips from the recipe — small details that make a real difference to the final dish.
- 1To prevent avocado from browning if preparing slightly ahead, toss it gently with a squeeze of fresh lemon or lime juice before adding to the salad.
- 2For perfectly segmented clementines, use a sharp paring knife and work over a bowl to catch any delicious juices.
- 3Adjust the sweetness and tanginess of the vinaigrette to your preference by adding more honey or vinegar.
- 4This salad is best enjoyed fresh, as arugula can wilt and avocado can brown over time once dressed.
