Blend until smooth: Secure the lid and blend on low speed, gradually increasing to high, until the dressing is completely smooth and creamy. Scrape down the sides of the blender with a spatula as needed to ensure all ingredients are incorporated.
Adjust consistency: If the dressing is too thick for your preference, add the remaining 1-2 tablespoons (15-30ml) of cold water, one tablespoon at a time, blending briefly after each addition until the desired pourable consistency is achieved.
