3 steps. 15 minutes total.

Step 1
- a.Prepare the Poppy Seed Paste and Batter
- b.Soak the poppy seeds in 1/4 cup of warm water for 30 minutes. This step is optional but makes grinding easier.
- c.Drain the soaked poppy seeds and transfer them to a grinder jar along with the green chilies. Grind to a thick, slightly coarse paste, using 1-2 tablespoons of water only if necessary to help the blades move. Scrape the sides to ensure even grinding.
- d.In a medium mixing bowl, crack the eggs and whisk them lightly for about 30 seconds.
- e.Add the prepared poppy seed paste, finely chopped onion, besan, turmeric powder, and salt to the whisked eggs.
- f.Mix everything thoroughly until you have a thick, well-combined batter. The consistency should be thick enough to hold its shape when spooned.

Step 2
- a.Shallow Fry the Boras
- b.Heat the mustard oil in a wide, flat-bottomed pan or skillet over medium heat. To check if the oil is ready, drop a tiny amount of batter into it; it should sizzle and rise to the surface immediately.
- c.Once the oil is hot, carefully drop spoonfuls of the batter (about 2 tablespoons each) into the pan, leaving space between them. Work in batches of 4-5 to avoid overcrowding.
- d.Gently flatten each portion with the back of the spoon to form a small, round fritter about 2-3 inches in diameter.
- e.Fry for 3-4 minutes on the first side, until the bottom is golden brown and the edges look crisp and set.
- f.Carefully flip the boras and fry for another 3-4 minutes on the other side until they are golden brown, crispy, and cooked through.

Step 3
- a.Drain and Serve
- b.Using a slotted spoon, remove the cooked boras from the pan and place them on a plate lined with paper towels to absorb any excess oil.
- c.Repeat the frying process for the remaining batter, adding a little more oil to the pan if it becomes too dry.
- d.Serve the Dim Posto Bora immediately while they are hot and crispy, traditionally paired with steamed rice (bhaat) and dal.
What to keep in mind.
5 tips from the recipe — small details that make a real difference to the final dish.
- 1For the most authentic Bengali flavor, use pungent mustard oil. Heat it until it's very hot (just before the smoking point) to mellow its sharp flavor.
- 2The batter's consistency is crucial. If it's too runny, the boras will spread out and absorb too much oil. Add an extra teaspoon of besan if needed to thicken it.
- 3Maintain a steady medium heat while frying. If the oil is too hot, the boras will brown too quickly on the outside while remaining raw inside.
- 4For a smoother paste, use a traditional 'shil nora' (grinding stone) or a powerful small blender jar designed for wet grinding.
- 5These fritters are best enjoyed fresh off the pan to retain their crispiness. They tend to soften as they cool.
