A classic Hyderabadi delight where hard-boiled eggs are fried until golden and then simmered in a rich, tangy, and spicy onion-tomato gravy. Perfect with hot rotis or steamed rice for a satisfying meal.

- a.Prepare the Eggs
- b.Place 6 eggs in a saucepan and cover with cold water by at least one inch. Bring to a rolling boil over high heat.
- c.Once boiling, turn off the heat, cover the pan, and let the eggs stand for 10-12 minutes.
- d.Drain the hot water and run cold water over the eggs until they are cool enough to handle. Peel the eggs and slice them in half lengthwise. Make a few light slits on the white part to help absorb the masala.

- a.Fry the Eggs (Talawa)
- b.Heat 2 tablespoons of oil in a wide, non-stick pan over medium-high heat.
- c.Gently place the egg halves, yolk-side down, into the hot oil. Be careful as it may splatter.
- d.Fry for 2-3 minutes until the yolk side is golden brown and crisp. Carefully flip and fry the other side for 1-2 minutes.
- e.Remove the fried eggs from the pan and set them aside on a plate.

- a.Prepare the Masala Base
- b.In the same pan, add the remaining 2 tablespoons of oil. Heat it over medium heat.
- c.Add the thinly sliced onions and sauté for 10-12 minutes, stirring frequently, until they turn a deep golden brown. This step is crucial for the authentic Hyderabadi flavor.
- d.Add the slit green chilies and ginger-garlic paste. Sauté for another minute until the raw aroma disappears.

- a.Cook the Gravy
- b.Add the turmeric powder, red chili powder, coriander powder, and salt. Stir for 30 seconds to toast the spices.
- c.Pour in the tomato puree and cook for 5-7 minutes, stirring occasionally, until the mixture thickens and you see oil separating at the edges.
- d.Reduce the heat to the lowest setting. Add the whisked curd and stir continuously for 2 minutes to prevent it from curdling. The mixture should become smooth and creamy.
- e.Once the curd is fully incorporated, add 1 cup of water. Stir well, increase the heat to medium, and bring the gravy to a gentle simmer.

- b.Gently slide the fried egg halves into the simmering gravy.
- c.Sprinkle the garam masala over the top.
- d.Cover the pan and let it simmer on low heat for 3-4 minutes, allowing the eggs to absorb the flavors of the gravy.
- e.Turn off the heat. Garnish with freshly chopped coriander leaves.
