- a.Soak and Cook the Beans
- b.Place the rinsed dried beans in a large bowl, cover with ample cold water, and let them soak for at least 8 hours or overnight.
- c.Drain and rinse the soaked beans. Transfer them to a large pot and add 6 cups of fresh water.
- d.Bring to a boil over high heat, then reduce the heat to a low simmer. Cook, partially covered, for 1.5 to 2 hours, or until the beans are very tender and creamy. Do not add salt at this stage.
- e.Once cooked, drain the beans but be sure to reserve at least 2 cups of the starchy cooking liquid. Set both aside.

- b.While the beans cook, heat the sunflower oil in a large, heavy-bottomed pan or Dutch oven over medium heat.
- c.Add the finely chopped onion and cook for 8-10 minutes, stirring occasionally, until soft, translucent, and lightly golden.
- d.Add the minced garlic and cook for another minute until fragrant.

- a.Prepare the Walnut Paste
- b.In a food processor or using a mortar and pestle, combine the walnuts, half of the chopped cilantro, ground coriander, utskho suneli, and imeretian saffron.
- c.Add 1/4 cup of the reserved bean cooking liquid to help create a paste.
- d.Process until a thick, relatively smooth paste is formed. It's okay if it has some texture.

- a.Combine the Stew
- b.Add the cooked beans to the pan with the sautéed onions and garlic.
- c.Using the back of a wooden spoon, gently mash about a third of the beans against the side of the pan. This will naturally thicken the stew.
- d.Stir in the prepared walnut paste, salt, and black pepper until well combined.
- e.Pour in 1 to 1.5 cups of the reserved bean liquid, depending on your desired consistency. The stew should be thick but not dry.

- a.Simmer and Finish
- b.Bring the mixture to a gentle simmer over low heat. Let it cook for 10-15 minutes, stirring occasionally, to allow all the flavors to meld together.
- c.Remove the pot from the heat. Stir in the red wine vinegar and the remaining fresh cilantro.
- d.Taste and adjust the seasoning, adding more salt, pepper, or vinegar if needed.
- e.Let the Lobio rest for at least 10 minutes before serving. Garnish generously with fresh pomegranate seeds.
