Marwari Deviled Eggs

Cook the Eggs
- Place the eggs in a single layer in a saucepan and cover with cold water by at least 1 inch.
- Bring the water to a rolling boil over high heat.
- Once boiling, immediately turn off the heat, cover the pan, and let the eggs stand for 12 minutes for perfectly set yolks.
- Prepare a bowl of ice water. Carefully transfer the cooked eggs to the ice bath and let them cool for at least 5-10 minutes. This stops the cooking process and makes them easier to peel.
Prepare Egg Halves
- Once the eggs are completely cool, gently tap them on a hard surface and peel away the shell.
- Slice each egg in half lengthwise with a sharp knife.
- Carefully scoop out the yolks into a small bowl, and arrange the empty egg white halves on your serving platter.
Make the Yolk Filling
- Using a fork, mash the egg yolks until they are a fine, crumbly texture. For an extra smooth filling, push the yolks through a fine-mesh sieve.
- Add the mayonnaise, plain yogurt (if using), turmeric powder, red chili powder, roasted cumin powder, amchur, salt, and black pepper to the mashed yolks.

Fill the Eggs
- Taste the yolk mixture and adjust the seasoning if necessary.
- Carefully spoon or pipe the filling back into the cavities of the egg white halves. A piping bag with a star tip creates a beautiful presentation.
Prepare the Tempering (Tadka)
- Just before serving, heat the ghee in a small tadka pan or skillet over medium-high heat.
- Once the ghee is hot, add the mustard seeds. Wait for them to splutter, which should take about 30 seconds.
- Immediately add the cumin seeds, broken dried red chili, and a pinch of hing. Sauté for another 20-30 seconds until the seeds are fragrant and toasted. Be careful not to burn them.
Garnish and Serve
- Immediately and carefully drizzle the hot tempering over the filled deviled eggs.
- Garnish with a generous sprinkle of fine sev and freshly chopped coriander leaves.
- Serve right away to enjoy the warm, aromatic tadka and the crunchy texture of the sev.
