In a mixing bowl or jug, add the sattu powder. Pour in about 1/2 cup of the chilled water and whisk vigorously with a fork or a small whisk to create a smooth, lump-free paste. This initial step is crucial to prevent lumps.
Once the paste is smooth, gradually pour in the remaining chilled water while continuously stirring to ensure it mixes evenly into a thin liquid.
Add the finely chopped onion, green chilli, fresh coriander leaves, roasted cumin powder, black salt, and regular salt to the sattu mixture.
Squeeze in the fresh lemon juice. Stir everything thoroughly until all the ingredients are well combined.
Taste the sharbat and adjust the salt, black salt, or lemon juice according to your preference.
Pour the sattu sharbat into two serving glasses. Add a few ice cubes if desired. Serve immediately and enjoy this refreshing drink.

Prepare the vegetables. Finely chop the cucumber, deseeded tomato, and red onion into small, uniform pieces (about 1/4-inch). This ensures a balanced bite and texture. Finely chop the green chilli and coriander leaves.
In a medium-sized mixing bowl, combine the chopped cucumber, tomato, red onion, green chilli (if using), and coriander leaves. Gently toss them together.
Just before you are ready to serve, add the seasonings. Sprinkle the salt, black salt (if using), chaat masala, and roasted cumin powder over the vegetables.
Drizzle the fresh lemon juice over the salad. Gently toss everything together until the vegetables are evenly coated with the spices and lemon juice. Serve immediately to enjoy its maximum crunch and freshness.
